Ingredients
• approx. 700 g pork fillet
• 120 ml apple juice
• 2 tablespoons honey
• 3 tbsp BBQ rub of your choice
• 100 g brown sugar
• 1 tbsp thyme
• Pepper
preparation
➊ For the marinade, heat the honey, mix with the rub, sugar and thyme and season with pepper. Marinate the meat in the fridge for 2-3 hours. For a quicker option, vacuum seal the meat with the marinade and leave to rest for 30 minutes.
➋ Set the grill or smoker to 100 °C and put the smoking chips (without water) on the embers. Smoke the pork fillet for about 1 hour (core temperature 58 °C). Cover and let it rest for a while and then serve.
