You can see them in almost every good western: massive black pots around which the cowboys gather to regain their strength. But what is the deal with the so-called fire pots ?

The classic Dutch Oven is a heavy and solid cookware made of robust cast iron . The Black Pots consist of a pot with a lid, small feet and a handle with a carrying handle. The Dutch Oven can either be placed directly on the coal or hung over the open fire using the handle. In order to generate top and bottom heat at the same time, it is possible to place the coal on the cast iron lid .

First, the Dutch oven is cleaned with warm water and a sponge and then rinsed thoroughly. After the pot has dried, it is seasoned. This can be done on a grill, in the oven or outdoors over an open fire. First, the Dutch oven is rubbed with sunflower oil and placed on the grill at 200°C with the opening facing downwards. Depending on the model, the procedure is completed after one to two hours, as soon as a dark, even patina can be seen in the pot. The cast iron is now protected from moisture and rust and also has a coating that prevents food from burning during preparation.

Preparing dishes in the Dutch Oven

When using the Dutch oven, it is particularly important to have sufficient heat. However, you should make sure that the pot does not stand empty for too long, as it could become deformed. The food can be prepared on the grill, in the oven or over an open fire, but charcoal briquettes are best for heating up the Dutch oven.

The ideal temperature depends on the type of food being prepared. The size of the pot and the amount of wood briquettes are also important. The lid is a good method for regulating the temperature: simply lifting it can reduce the heat in the pot. If very hot steam is encountered, the heat source should be regulated accordingly.
