Grill(s) & equipment:
• grill with grate, pot, pan
Ingredients
• 2 medium char fish, 350–400 g each
• salt
• pepper
• 8 coriander seeds, crushed
• 1 clove of garlic
• 5 tbsp olive oil
• juice of 1 orange
• oil for the grill grate
• optional: melted butter
Preparation
➊ Wash and pat dry the fish. Season with salt, pepper, and coriander. Finely chop the garlic and mix with oil and orange juice. Marinate the fish for about 30 minutes.
➋ Afterwards, remove and pat dry well again so that the skin does not stick too much to the grill grate when grilling.
➌ For grilling, it's best to secure the char in a fish grill basket and place it on the oiled, not-too-hot grate. Grill the fish for 15–25 minutes, depending on its size, turning it carefully several times. During the last turn, you can brush it with melted butter if desired.
Petra's Tip: Serve with a lukewarm potato salad dressed with vinegar, broth, and oil, as well as a sour cream dip with fresh herbs.
