Ingredients

Ingredients (per person):

• 150 g lamb chops,
trimmed
and cut into portions
• 200 g courgettes,
cut into nice pieces
• 50 g spring onions, in not
rings cut too narrow
• Salt
• Pepper

For the mint marinade
(Quantity is enough for approx. 2 kg of meat):
• 4 jalapeño chilis, finely chopped
• 4 garlic cloves, finely chopped
• 1 small onion, finely chopped
• 1 bunch of fresh mint
• 1 tbsp coriander leaves
• 1 teaspoon sugar
• 1 tbsp salt
• 100 ml olive oil
• Juice of 2 limes
• 2 tablespoons apple cider vinegar

preparation

For the mint marinade, grind all ingredients in a mortar to a paste and season with salt and pepper; it should be very aromatic!

Leave the lamb chops in the marinade in the refrigerator for at least 4 hours and bring them back to room temperature in time before preparation.

Grill on all sides on the hot plate and cook until they are nice and pink, turning and turning often. At the same time, fry the zucchini and spring onions on the plancha.

Serve together hot.
