The tinted, insulated glass door protects the meat from UV light. The meat matures on the bone inside the cabinet at approximately 85% humidity and a temperature of 2°C. The precise electronic control of the DRY AGER DX500 ensures a constant temperature, adjustable in precise 0.1°C increments. Humidity can also be precisely regulated from 60% to 90% using HumiControl® , even without a water connection. This, combined with the integrated DX AirReg® system, ensures a perfect microclimate, optimal airflow, and continuous sterilization, even with significant fluctuations in ambient temperature.
The DX 500 features an activated carbon filter and an active UVC disinfection box that completely disinfects the air inside the cabinet once per minute. Dangerous bacteria and unwanted germs have no chance here. Surprisingly, the weight loss of beef during on-the-bone aging is minimal. After approximately four weeks of aging in the DRY AGER, it is only about 7 to 8%, and after six weeks, about 12%. These values are significantly lower than in most other aging cabinets. The DRY AGER is also suitable for producing dry-aged beef. It can be used for storing and aging salami, ham, and other types of meat, as well as for cheese storage.

Completely disinfected every minute
The DX 500® Premium, along with the DX 1000® Premium, is the only professional ripening cabinet worldwide with an activated carbon filter and an active UVC disinfection box, which completely disinfects the air in the cabinet once per minute, thus giving dangerous bacteria and germs no chance.
Highly precise humidity control
Thanks to HumiControl®, the humidity can be precisely regulated from 60% to 90% in 0.5% increments, just like in the larger DX 1000® Premium, without a water connection or water tank. This, together with the integrated DX AirReg® system, ensures a perfect microclimate inside, optimal airflow, and continuous disinfection, even with large fluctuations in ambient temperature.
Minimum temperature control
For dry aging, we recommend maturing the meat on the bone at approximately 82–85% humidity and a temperature of 1–2 °C. The precise electronic control of the DRY AGER DX 500® Premium ensures constant temperature maintenance, which can be regulated in exact 0.1 °C increments from 0 to +25 °C.
Surprisingly low tire loss
The weight loss of beef (fresh meat) during on-the-bone aging is only approximately 7-8% after 4 weeks in the DRY AGER® DX 500® Premium and approximately 12% after 6 weeks. These internal measurements are significantly lower than in most other aging cabinets on the market – another argument in favor of the DRY AGER®!
The all-rounder
The DRY AGER® is not only suitable for producing dry-aged beef. Thanks to individually adjustable temperature and humidity settings, it can also be used for maturing and storing sausages such as salami, ham, and other meats, as well as for storing cheese.
Perfect UV protection
To protect the valuable contents from harmful UV light, the insulating glass door of the DRY AGER, held by an elegant stainless steel frame, is tinted (metallized).
