Calibrating the Thermapen in ice water:
Step 1: Fill with ice
A proper ice bath is all about maintaining a proper ice-to-water ratio. Fill a container to the brim with ice. Crushed ice is better because there are fewer gaps between the ice, but ice cubes work well too.
Step 2: Add water
Slowly add water to fill the spaces between the ice. Pour water into the jar until it is about 1 cm below the (ice) rim. Then let the mixture sit for a minute or two to allow the water temperature to drop. When the ice floats up from the bottom of the jar, pour off some of the water and add more ice. The ice must be evenly distributed all the way to the bottom. Water below the ice is not 0° C!
Step 3: Inserting the probe
Once the mixture has rested for a minute or two, insert the probe into the center of the jar and stir gently. Stirring the probe prevents the sensor from touching an ice cube, which would negatively affect the measurement. Also keep the probe tip away from the sides and do not let it touch the bottom of the jar. This will lead to inaccurate temperature readings. Constant stirring will even out colder or warmer spots throughout the jar.
Step 4: Confirm calibration
The thermometer should read 0°C (32°F) in the ice bath. Adjust the Thermapen's display accordingly. Also check that the readings are within the Thermapen's accuracy specification, which is ±0.4°C. If the reading is within the specified tolerance, you do not need to make any further adjustments.
Note: Calibration can alternatively or additionally be carried out in boiling water (100°C).
