The evolution of the kamado into a modern and popular grill is a long story, to which FIRE&FOOD dedicated its own bookazine a few years ago. And so most of you already know that this is originally an Asian clay oven that finally took hold in Europe after a few detours via America. All quite interesting. But it is much more exciting to see where the modern kamado stands today and how it has developed over the last few years.
Kamados – also known as ceramic grills – differ fundamentally from classic grill devices. Not just visually, but above all in their construction and functionality. The heart of the device is a thick-walled body made of ceramic materials, which must be manufactured to be particularly robust in order to permanently withstand high temperatures, weather influences, and strong temperature fluctuations. Even the smallest air inclusions or hairline cracks would impair stability and are considered potential weak points. Kamados have long since ceased to be exotic items on the market and can be found in grill specialty shops all year round in all sorts of colors, sizes, and price ranges. And as soon as summer approaches, they can even be found in large grocery and discount chains. What they all share, despite their diversity, is the characteristic egg shape, which, in combination with the domed lid, ensures even air circulation in the interior. On the outside, the ceramic is usually glazed and protected, while it remains open-pored on the inside. This structure makes it possible to absorb and continuously release moisture and smoke during grilling – an effect that contributes significantly to the typical aroma. For this reason, one should refrain from using chemical lighters or cleaning agents, as their residues can naturally also settle in the ceramic.
Enormously versatile
A major advantage of kamados is their versatility. They are equally suitable for direct and low & slow grilling, smoking, and even baking – for example, pizza, bread, and casseroles. With accessories such as different grill grates, rotisseries, wok inserts, or pizza stones, the range of applications can be expanded in many ways. Thanks to the almost airtight construction, the temperature can be controlled extremely precisely: oxygen is supplied via an air intake at the bottom, while a vent in the lid regulates the exhaust air. This interplay makes the kamado an efficient and easily controllable grill system. Depending on the manufacturer, the temperature spectrum is approximately between 70 and 450 °C.
What size would you like?
The medium-sized variant, often called Large, is particularly popular. It offers enough grilling surface for family and guests. Here, the selection is particularly diverse: from the simple entry-level model to the luxurious version with a base – also called a nest –, side tables, and sophisticated hinge mechanisms. Since grilling with ceramic grills is finding an ever-growing target group – for example, around 65 percent of grill fans in the Netherlands own a kamado – they are now available in various sizes. There is always a spot for the smallest kamados, and they are even portable. In restaurants, they are often used as steak grills. And for those who frequently host large barbecue parties or work in catering, XXL appliances are the suitable models.
When buying, the focus should be primarily on the quality of the ceramic, the sealing ring, and the air circulation, as these significantly determine the temperature control and thus the grilling result. Other important factors are user-friendliness, durability, and appealing workmanship. A low price may seem tempting at first glance, but a high-quality kamado will bring you years of enjoyment.
