• Grill, griddle, wood chips
Ingredients
• 100g Salted Nacho Chips
• 50 g flat-leaf parsley, chopped
• 2 x 250 g feta cheese
• 2 cloves of garlic, chopped
• 150 g watermelon,
cut into cubes
• 150 g cherry tomatoes, halved
• 100 g jalapeños
• Salt
• Pepper
• Pomegranate syrup
• Vegetable oil for the plancha
• 1 handful of wood chips
(e.g. applewood)
preparation
Halve each block of feta cheese to make four pieces. Crush the nachos into fine crumbs, for example with your hands or a rolling pin. Mix with the chopped parsley and garlic. Roll the four pieces of feta cheese in the mixture, then divide the remaining nacho mixture between the plates.
➋ Preheat a grill with a lid and add the wood chips for smoking. Distribute the tomatoes and jalapeños on the grill grate and smoke for 20 minutes in the closed grill. Then heat a plancha or a flat griddle to a high temperature and brush it with a little vegetable oil.
➌ Place the vegetables and melon cubes on one side of the grill and the feta cheese on the other. Grill the feta pieces for about 2 to 3 minutes on each side until golden brown.
➍ Now season the vegetables with salt and pepper and drizzle with a little pomegranate molasses. Arrange on plates together with the feta cheese.
