Ingredients

• 1 Tri Tip (Mayor’s Piece)
• Ciabatta
• Frisian Blue cheese or Gorgonzola
• Wild herbs Salad
• Potato Chips

For the guacamole:
• 1 ripe avocado
• 1 tomato, very finely diced
• Juice of ½ lemon
• 1 garlic clove, pressed
• Salt
• Pepper

preparation

Halve the avocado and remove the pit. Scoop out the flesh with a spoon and mash it with a fork to form a fine puree. Add the diced tomatoes, lemon juice and garlic and mix everything together. Season with salt and pepper.

Remove the fat from the tri tip, salt it and grill it whole on both sides for 3 – 5 minutes over high heat – if you have one, use the steak zone on your grill.

Cut the ciabatta lengthways and grill the cut surfaces. Cut the meat and cheese into slices. Spread the cheese slices on the meat and grill everything again slightly indirectly.

Spread guacamole on the bottom half of the ciabatta and top with wild herb salad. Distribute the meat/cheese slices on top and place the ciabatta lid on top. Decorate with a few potato chips.
