Trout with apple-fennel mix

Ingredients
• 800 g trout fillets with skin
• 600 g fennel
• 600 g sweet and sour apples
(e.g. Cox Orange)
• Olive oil
• Salt
• Pepper
• Chili according to your taste
• colorful vegetable sprouts
• Parsley, chopped
• Smoking wood (e.g. beech or alder)
preparation
➊ Wash and quarter the fennel and apples, removing the core from the apples. Roast on all sides on the grill, but do not cook through so that it retains a slight bite. Then remove from the grill and cut everything into even strips or pieces. Mix in a bowl with olive oil, chili, parsley and sprouts and season with salt and pepper.
➋ Set up the grill for direct grilling and set it to medium heat. Add some smoking wood to the embers.
➌ Oil the fish, season with salt and pepper and grill over direct, medium heat on the skin side only. Then smoke until the fish is cooked but still slightly translucent.
➍ To serve, spread some apple-fennel mix on the plate and place the fish on top.
