Ingredients

• approx. 2 kg beef ribs
(Texas-sized beef ribs)

For the rub:
• 3 tbsp coarse sea salt
• 2 tbsp smoked Spanish paprika
• 1 tbsp Tellicherry pepper
• 1 tbsp onion granules
• ½ tbsp red chili flakes
• ½ tbsp thyme, crumbled
• ½ tbsp rosemary, dried
• ½ tbsp coriander seeds
• ½ tbsp dried dill tips
• 1 tbsp garlic granules

For the marinade:
• 500 ml beef broth
(homemade or
(Finished product from a jar)
• 120 ml Worcestershire sauce

For the glaze:
• 1 part marinade
• 3 portions of BBQ sauce
to taste
• 1 tbsp honey

For the smoky note
(Add once per hour throughout the entire cooking time)
Charcoal grill: 1 handful of hickory or mesquite wood chips or chunks
Pellet grill: Hickory or oak wood pellets
Gas grill: Smoker box with hickory

preparation

Set up a grill with a lid or a smoker for indirect grilling and regulate the grill temperature to about 110-120 °C.

Mix the marinade and put it in a spray bottle, mix the ingredients for the rub and grind them coarsely or crush them in a mortar.

Completely remove the membrane from the bone side of the ribs. Generously season the ribs on all sides with the rub and then place them in the indirect grilling zone of the grill or in the smoker.

For a strong smoky flavor, add wood chips at the beginning of the cooking time and every hour thereafter. Also, spray the ribs with the marinade every 30 to 45 minutes. Grill for about 5 to 6 hours, until the meat is beautifully tender and falls off the bone. Shortly before the end of the cooking time, prepare the glaze and brush it over the ribs for shine and to round out the flavor.
