From Texas with Love Beef Ribs

Ingredients
• approx. 2 kg beef ribs
(Texas sized beef ribs)
For the rub:
• 3 tablespoons coarse sea salt
• 2 tbsp smoked Spanish paprika
• 1 tbsp Tellicherry pepper
• 1 tbsp onion granules
• ½ tbsp red chili flakes
• ½ tbsp thyme, shredded
• ½ tbsp rosemary, dried
• ½ tbsp coriander seeds
• ½ tbsp dill tips, dried
• 1 tbsp garlic granules
For the marinade:
• 500 ml beef broth
(homemade or
Finished product from the jar)
• 120 ml Worcestershire sauce
For the glaze:
• 1 part marinade
• 3 parts BBQ sauce
to taste
• 1 tbsp honey
For the smoky note
(Add once per hour during the entire cooking time)
Charcoal grill: 1 handful of hickory or mesquite wood chips or chunks
Pellet grill: hickory or oak pellets
Gas grill: Smoking box with hickory
or Mesquite Woodchips

➊ Set up a grill with a lid or smoker for indirect grilling and adjust the grill temperature to about 110-120 °C.
➋ Mix the marinade and pour it into a spray bottle, mix the ingredients for the rub and grind coarsely or crush in a mortar.
➌ Remove the membrane completely from the bone side of the ribs. Generously season the ribs on all sides with the rub and then place them in the indirect grilling zone of the grill or in the smoker.
➍ For a strong smoky note, add wood chips at the beginning of the cooking time and every hour thereafter, and spray the ribs with the marinade every 30 to 45 minutes. Grill for around 5 to 6 hours, until the meat is tender and falls away from the bone. Shortly before the end of the cooking time, mix the glaze and use it to glaze the ribs for shine and to round off the flavor.
