Fluffy carnival doughnuts with quark

Ingredients
• 250 g flour
• 125g sugar
• 250 g curd
• 3 eggs
• ½ packet of baking powder
• 1 packet of vanilla sugar
• 1 teaspoon lemon zest
• approx. 1 l frying oil
• 125 sugar
• Cinnamon to taste
preparation
➊ Mix the sugar, vanilla sugar and eggs with a hand mixer. Then add the quark and lemon zest and then stir in the flour and baking powder.
➋ Heat the oil in a wok pan or in a high pot over a fire. The temperature should be around 180 °C; use a thermometer if necessary. Use 2 spoons to cut dumplings out of the dough and place them in portions in the hot oil.
➌ Bake the doughnuts for 2-4 minutes, turning them occasionally, until golden brown, remove with a slotted spoon and drain on kitchen paper. Mix the sugar and cinnamon. Roll the doughnuts in the mixture and serve.
