The future of the butcher trade
One profession that has recently come under considerable competitive pressure is the artisan butcher's business. Even in Bavaria, where the Butchers' Association still brings together around 1,400 artisan butcher's businesses, the demise of businesses continues unabated. The reasons for this are very varied. Often it is the products that can no longer be offered at a cost-covering price, but meat and animal scandals also have a negative impact on sales, or the business simply has a successor problem or cannot get any employees. All of these reasons lead to a high level of negative image pressure in the public perception. This is also reinforced by distorted and one-sided representation in the press. By expanding their range to include grill and barbecue products, some butchers have been able to reposition themselves in recent years and buck the negative trend. Butchers such as Heiko Brath from Karlsruhe or Jürgen David from Worms are doing exemplary work here.
FIRE&FOOD is supporting the turnaround with its public relations work. Be it through information work on meat quality, the editorial involvement of successful butchers or through image-building measures for the butcher trade - such as the new cooperation with the TV channel HISTORY, which will soon be launching a new series called "The Butcher".
