"Baroko means 'exuberance' (in Tagalog, the language spoken on the island of Negros). The rum that bears this name has a uniquely exuberant design and flavor profile that fits perfectly into the DNA of Don Papa," explains Stephen Carroll, founder of Don Papa. "Baroko celebrates the passion and enthusiasm of Papa Isio, the revolutionary hero and shaman from the Philippine island of Negros, where the rum is produced and for whose independence Papa Isio fought."

The basis for the rum is black sugar cane molasses, also known as "black gold". The Baroko matures for several years at the foot of the Kanlaon volcano in ex-bourbon barrels made of American white oak before the distillates are blended to create a rich and smooth finish. The resulting blend reflects the original spirit of Don Papa: rich in lemon and vanilla aromas, full-bodied with notes of candied fruit and honey. The whole thing culminates in a powerful and long finish with raisins and a dry hint of toasted oak. Baroko tastes great neat, on ice or in cocktails.

The production of Don Papa Rum
Don Papa Rum comes exclusively from the island of Negros. The premium aged rum is distilled from one of the world's highest quality types of sugar cane and matures at the foot of Mount Kanlaon. It is allowed to mature for over seven years in American oak barrels. A selection of rums is then carefully blended to perfection and bottled in small batches.

The sugar island of Negros
For more than a century, Negros was known as the "sugar bowl" of the Philippines. From the mid-19th century until the 1980s, sugar cane cultivation dominated this mountain-craggy island with its lush jungle areas and white sandy beaches. One of the most successful and sweetest types of sugar cane thrived on the fertile volcanic soil. Historic estates scattered throughout the island bear witness to the heyday of the sugar barons and their accumulated wealth.
