"Bavaria glows" Grilling and barbecue with regional products
Two BBQ experts at the Dutch oven: For the production of the recipe videos “Bayern glüht” Elmar Fetscher and Giuseppe Messina grilled at the idyllic Schliersee in Upper Bavaria, e.g. delicious “venison in a Dutch oven with pretzel dumpling soufflé”.
The barbecue boom of recent years shows that more and more consumers are focusing on quality. Not just in terms of the "hardware" when it comes to the perfect barbecue. What is prepared on the hot grill should also be of high quality and thus contribute to unadulterated barbecue pleasure. Consumers take a closer look when shopping - but it is often not easy to recognize local and high-quality barbecue meat at first glance. This leaves them with uncertainty as to whether the piece of pork, beef, lamb or game they have bought really promises juicy enjoyment. In addition, the demand for regionally produced food is growing - the Corona crisis has fueled this development even further. Those who consciously decide to buy from and in the region want to support local producers and make a contribution to climate and environmental protection. But the term "regional" is often very flexible because it is not legally protected. In order to help consumers make purchasing decisions and to support regional producers, the state of Bavaria, represented by the State Ministry of Food, Agriculture and Forestry (StMELF) , launched the state quality and origin assurance program "Tested Quality - Bavaria" in 2002. "GQ Bavaria" sets requirements for production and processing, compliance with which is ensured by a three-stage control system. Products certified as GQ Bavaria are manufactured and processed exclusively in Bavaria, and the quality standards set out go beyond the legal framework. "With GQ Bavaria and the blue and white diamonds, consumers immediately have orientation when shopping and know that the seal offers transparency and absolute quality directly from Bavaria," explains State Minister Kaniber. This is also the basis for the new campaign “Bayern glüht”, in which FIRE&FOOD grill expert Giuseppe Messina, together with editor Elmar Fetscher, shows recipes for grilling in four videos and gives valuable tips and information about meat cuts and qualities.
Good meat needs improved conditions for humans and animals
FIRE&FOOD has been committed to better meat quality for years, including with the development of the FIRE&FOOD Meat Scout. Elmar Fetscher says: "The Bavarian GQ-Bayern seal of origin is a sensible initiative to focus on foods that are characterized by regionality combined with reliable quality. There is still a lot of room for improvement nationwide, especially when it comes to meat quality. GQ-Bayern is an important step in the right direction. This includes, for example, reduced transport time for animals (maximum four hours after loading) and quality-assured feed. Anyone who buys regional GQ products such as beef, lamb and pork or game and vegetables can be sure that they are supporting local farmers and at the same time putting something of extremely high quality on the grill. It was high time for a turnaround, and we want to support this with FIRE&FOOD. Because grilling and barbecue in particular - and of course this also includes the culinary range of a Dutch oven - are methods of preparation that reflect the originality of our diet. And that starts with shopping right on our doorstep.”
Bavaria is glowing – and the Bavarian Minister of State for Food, Agriculture and Forestry, Michaela Kaniber, is also lending a hand.
